A red onion is sliced into rings and placed at the bottom of the tagine with the meat placed in the center. The veggies are built up around it in conical fashion to mimic the shape of the lid. Layers of olive oil, spices and other goodies are added, then the dish is covered and cooked on a slow simmer." I'm calling this - Almost Vegan Mac n' Cheese (100% Vegetarian) cuz let's be honest here, it ain't mac n' cheese without actual cheese. . . . . . .Why the 'almost'? Because I've been trying to eat better and let's face it, mac n' cheese isn't something we consider "healthy" lol, but it's sure tasty isn't it?! So I decided to replace the majority of the cheese with vegan (cashew) based cheese instead and at the end add about only about 1/4 cup of cheddar. Cuts those calories down tremendously. In addition I added some diced peppers, onions, garlic, and spices. Chinese 5 Spice Short Ribs w/Daikon Radish & Carrots served with Cauliflower Rice (+ rice) . . . . . . . New discovery - if you cook a tad bit of (cooked 80%) white rice with your cauliflower rice (finished together on the stove with the lid close for 5 to 10mins) it still taste/textures like the whole thing is white rice but not! Great for curries and dishes like this.
