Ground bay leaves come from the sweet bay or laurel tree, known botanically as Laurus Nobilis. An essential ingredient in American kitchens, bay leaves are used in soups, stews, meat and vegetable dishes. The leaves also flavor classic French dishes such as bouillabaisse and bouillon. Bay Leaves are pungent and have a sharp, bitter taste that go well with beans, game, lentils, potatoes, risotto, shellfish, and tomatoes.

    I mean... who really loves fishing around in a big pot of hot food to pick bay leaves out at the end?

    Conversion is approximately 1/8 - 1/4 tsp ground bay = 1 whole bay leaf.

    Careful though - since you can't yoink it back out of the pot like whole leaves, it's wise to add the teeeeniest pinches at a time, let cook a little while, taste, and add more if you feel it needs it.
