These chile peppers are nicknamed rattle chilies because the seeds rattle when they are shaken. These peppers have a brownish-red, smooth translucent skin with a lightly acidic, smoky flavor. When toasted, it has an agreeably nutty flavor and tastes moderately hot. These are perfect peppers for toasting and blending with tomatoes or tomatillos to make salsa or stews.

    I recently got the Nopalito cookbook – a very solid purchase - and the first recipe I tried was Vegetales con Aceite de Chile Cascabel. Ridiculously good – the effort to deliciousness ratio was off the charts for this one. Super healthy too, and a great way to use up rando odds & ends in CSA boxes.

    Pro tip: double the amount of cascabels, guajillos & garlic for your oil – you won’t regret it. They have a ton of flavor, but are not hot. I was on the fence about getting the 1 lb bag, but no regrets. We'll definitely go through it before they start losing their flavor (Posted on 2/7/18)

    I purchase this Chile Cascabel for me and my family. I make the Cascabel into a paste, save it in my refrigerator and use when needed. It's such a unique flavor. I saute beef, chicken, pork or even shrimp, add Cascabel to taste along with tomato paste or sauce. Muah, great tasting meal. I love it (Posted on 6/20/17)
