This is a mild to medium chili closely related to the Ancho, and usually sold dried. When dry the pepper is very dark brown, almost black, in color (due to the chlorophyll remaining in the ripe fruit). It is an important chile in Mexican cooking, along with the Ancho and Pasilla chiles. Mexican mulato chiles are part of the famous “trilogy” used in making mole poblano, as well as other Mexican sauces and stews.
