Originating in India and Indonesia, long pepper is mostly used in Asia, East Africa, and North Africa in slow cooked dishes and pickles. It is usually used in whole form. It has a smell which is sweetly fragrant, and at first resembles black pepper in taste, but it has a biting, numbing aftertaste.
