Herbes de Provence is a traditional blend of herbs that flourish in the Provence region of France: basil, thyme, savory, rosemary, tarragon, lavender and fennel seed. This mixture is a classic seasoning for roasted chicken and potatoes. (It also loves tomatoes — try it mixed with sea salt in this Heirloom Tomato Salad.)
