Orange is the culinary marvel!

We have orange peel, blood orange, and Seville orange all three of which are quite amazing in food recipes and for show-stopping presentation. Not only is the citrus orange one of the most loved fruits on the planet, it is also packed with Vitamin C and other healthy nutrients it is just plain good for you!

The thick outer layer that protects the fruit is the peel, and is also known as the rind or skin. The peel is quite bitter so it is not generally eaten, but when grated or scraped, it is used as a zest in certain recipes. The peel carries the essential oils of the fruit which adds a tangy flavor to the dish. You can also pare the peel into thin strips and use it as an aromatic garnish. The concentrated flavor you get when using orange peel can transform any dish such as, stir-fries, salads, tagines, rice dishes, soups, desserts and definitely a hot cup of tea into something incredibly delicious the applications are endless.

Dried peel is also easily ground into a powder that can be used for making dry meat rubs. The peel retains its acidic properties, which helps to tenderize the meat while infusing flavor. Try adding a touch of dried peel powder to cake batter and savor the subtle orange flavor.

Blood orange is such a gruesome name for something that is so alluring and beautiful. The deep crimson hue of the fruit is truly a work of art from Mother Nature. The blood orange is actually a variety of citrus orange that is generally smaller than the common orange fruit and is available from August to October which means they are much sought after.

Blood oranges reign supreme among all citrus fruit, as the rich flavor in each bite is less acidic than its relatives, and tastes sweeter too; it has been described as tasting like raspberry. The deep red pigment is a result of phytonutrients, called anthocyanins, that is found in other red fruits and flowers but not in other citrus fruits.

Depending on the variety of blood orange, you are likely to find the Moro, the Sanguigno and the Tarocco varieties in markets. The flesh can vary in color and the skin can be tougher and harder to peel than that of other oranges.

Blood orange can be used much in the same way as other orange fruit, only you will get the brilliant color of the blood orange. Whether for juicing or for creating marmalade, compotes, salads, dressings and tangy sauces, blood orange delivers that extra goodness to any dish. Add the zest of blood orange when baking muffins, scones or in frosting's. Serve up a blood orange cocktail during the holiday festivities.

Seville Orange, like its name, hails from the southern region of Spain. This particular variety of citrus fruit is known for its bitter and sour flavor. It is a hybrid between pomelo and mandarin citrus. Even though they may look like other oranges, the sharpness of this variety are usually only edible when cooked, or for its zest appeal.This bitter orange can also be found in any beer that has a citrusy flavor, especially in holiday ales and Belgian Witbier.

Sevilles are mostly used for the production of marmalade or for home-made preserves. They are seasonal fruit, so stock up when you can if you plan on making marmalade or preserves. But don't stop there -- the tangy zest of the Mediterranean can be used in so many more ways in the kitchen. For starters, add Seville orange peel to dry meat rubs and marinades the acidity of the Seville's cuts through the fatty flavor of pork dishes, while infusing sweetness and adding a refreshing taste.

For making my own flavored sugar, I use a coffee grinder to blend fresh orange zest with sugar. This can be done with zest of lemon or lime as well its a perfect way to add a touch of tangy sweetness to frosting for cakes, cupcakes, or any baked treats; it even works wonders for rimming champagne glasses.
