Whole Wheat Flatbread

You'll be amazed at how quickly these cook up.
(Makes 4-6 large flatbreads or 6-8 small ones)

2 cups white whole-wheat flour
1 Tbsp. sugar
1/2 tsp. sea salt
1 tbsp. olive oil
1 tsp. yeast
1 cup water

Combine all ingredients in a bowl and then knead the dough; cover for an hour. Knead the dough a second time and then divide into 4-8 balls.
Using a small amount of olive oil, coat a rolling-pin as well as a flat surface for rolling the dough.
Roll and flatten each dough-ball approximately 4 to 6 inches in diameter, depending on how many you are making.

Heat a nonstick pan to medium high.
Place the flattened dough on the hot surface and cover for 45 seconds.
Uncover and flip the bread over and cook for another 45 seconds.
You can brush the flatbread with a bit of olive oil or butter for additional flavor.
