    Who says vegans can't enjoy hearty Louisiana-style cuisine? Let the good times roll with this spicy plant-based dish that's also packed with favor, fiber and protein. You can make a version of this dish with just about any dried bean, but red beans are the most authentic. Try Domingo Rojo beans from Napa’s own Rancho Gordo. They have great flavor and hold their shape very nicely when cooked.

  • Vegetarian Couscous Stew


    3 Tbsp olive oil
    1 onion, finely chopped
    2 garlic cloves, finely chopped
    2 tsp fresh ginger, crushed
    1 Roma tomato
    2 celery sticks, finely chopped
    1 1/4 tsp couscous spice
    1/2 tsp ground ginger
    1/2 tsp paprika
    1/2 tsp ground black pepper
    1 tsp salt
    3 carrots, peeled and cut into 2-inch chunks
    2 1/2 cups Brussels sprouts (about 13 pieces)
    1/2 lb. banana squash cut it into wedges
    1 small sweet potato, cut in quarters
    1 small potato, cut into quarters
    2 yellow zucchini
    1 small turnip, cut into quarters
    1 can garbanzo beans
    1 small bouquet parsley, approx. 1 cup finely chopped

  • Simple Rice and Turkey Leftovers


    1 cup rice
    1 tbsp olive oil
    1/2 cup Almond Cranberry rice seasoning
    1/2 tsp salt
    1/2 cup shredded turkey
    1 & 3/4 cup water

    Heat up a nonstick pan. Add oil and seasonings; almond cranberry, and salt. Saute for one minute and then add turkey -- saute for an additional minute. Add water and bring to a boil. Cover and lower the heat simmer for 20 minutes.

    1 1/2 cups short grain rice

    1/2 cup fresh parsley, finely chopped
