What A Dal!

The amazing world of Indian cuisine can be summed up to tantalizing aromas, colorful flavors and exotic textures that work in harmony to create signature dishes like curries, tandoori chicken and chicken tikka masala.

One of our favorite Indian dishes is dal (daal or dahl) which is actually a split version of a number of pulses such as lentils, peas, mung beans, chickpeas and more. When they are split into half, it is considered to be dal; an example would be mung beans split in half is mung dal.

Dal can be made as a stew or a soup, all you need is a pot of water, the right spices, and the type of dal you want to cook; and it can take anywhere from 20 minutes to an hour.

A good long soak in water would quicken the process of softening the type of pulse or beans making it easier to become creamy and smooth. For us, dal is like comfort food, you can eat it as a thick soup with a side of flatbread, or as a side dish with Basmati rice. We pretty much eat dal all year round; it is just as good on a summer day as it is on a winter's night.

In most Indian households, dal is a significant food staple, as pasta is to the Italians. Versions of dal can vary depending on the region, and considering the number of regions in India, the range of pulses or legumes, and the palette of spices used around the country, gives you an idea of the many variations of dal that exist. For example, some cooks may saute cumin, turmeric and chile pepper in oil then add the infused oil toward the end of the cooking process. Some chefs may add other spices like mustard seeds, cinnamon or cardamom to the mix.

Lets not forget to mention that fiber-rich dal is an inexpensive source of protein with notable spices like turmeric that is recognized in traditional Indian Ayurvedic medicine.

Because we love to eat dal as a soup, we made a special blend specifically for that purpose using some traditional spices like warm cumin and turmeric, and then added a few more exotic ones to the mix such as tamarind and fenugreek.

Whether making dal as a soup or a delicious stew, you will probably want to eat it all year round as we do.
