A dish native to Mexico, molé has a complex and rich flavor profile comprised of many different ingredients. This chocolaty, spicy blend is blended with 21 different spices and is perfect for making any molé dish. The preparation of the famous mole sauces of Central Mexico can be complex and take days to prepare. This reasonable interpretation is a must for those who want to prepare mole in less time but still want to savor the incredible flavor. Stew with other sauce ingredients to finish the sauce. Stunning flavor!

Mole Sauce

¼ cup vegetable oil

1/3 onion, finely chopped

1 Tbsp plantain banana, cut

1 Tbsp green tomatillo, chopped

1 cup Molé spice mixture

1 Tbsp white wine

¼ tsp salt

1 cup hot water

In a nonstick pan heat up oil and add the onion, plantain and tomatillo. Sauté on a medium-high heat for about 10 minutes and then add 1 cup of Mole spice mixture. Lower the heat and add wine, salt and ½ cup of water. Cover and cook for 15 minutes. Transfer all ingredients into a blender. Add ½ cup water and purée until smooth and creamy. Serve over your favorite roasted meat.

    Okay I’ve had mole sauce a few times in my life but always wanted to try it at home. We were at Oxbow Market the other day and were stocking up on some basic spices when I came across this Mole Spice Mix. I thought, okay let’s try it. My husband decided to make it today - he made whipped up the sauce early in the day and let the flavors marinade. He used it in lieu of enchilada sauce for dinner tonight and made mole enchiladas. Wow! Our family devoured these in silence. The flavor is so complex, sweet, earthy and nutty and really developed over the course of the day as well as from baking it.     I used this mole mix to coat the beef in my stew before browning. Then made the best beef stew of my life with the addition of onions and carrots and red wine. The result was rich and meaty - tasted of chocolate coffee and spice. (Posted on 12/22/2019)
