Ingredients:
3/4 Cups Roasted Unsalted Sliced Almonds
1/2 Cup Dried Apricots
1/2 Cup Onion (finely chopped)
1/2 Cup Raisins
2 Tbsp. Olive Oil
1/2 Tsp. Turmeric Powder
1/2 Tsp. Ground Cinnamon
2 Tbsp. Brown Sugar
1/4 Tsp. Sea Salt
Pinch Black Ground Pepper
1 ½ Cup Water
In Morocco, the use of dried fruits in tagine is very common. Turmeric spice compliments the flavor of nuts and dried fruits. I base this recipe on a more complicated, slowly-cooked, sweet traditional Moroccan couscous.
This is a quick and delicious version that my kids enjoy very much. You can substitute the nuts and dried fruit to anything you like.
In a medium size pan, heat up the olive oil and sauté onion until brown. Add turmeric powder and sauté for 20 seconds. Add rest of the spices: Brown sugar, cinnamon, salt and pepper. Add: almonds, raisins and apricot and mix well. Add water cover and lower the heat. Cook on low heat for 30 minutes. Serve over couscous (follow box instructions).
