Instructions:
1. Mix the Base:
- In a mixing bowl, combine the low-fat yogurt, Dijon mustard, dried chives, honey, salt, and pepper.
2. Whisking:
- Whisk the ingredients together until the salt is completely dissolved.
- Gradually whisk in the olive oil, adding it drop by drop while continuously whisking to create an emulsion.
3. Add Lemon Juice:
- Finally, whisk in the fresh lemon juice.
4. Blender Option:
- Alternatively, you can combine all the ingredients in a blender and blend until smooth for a more effortless approach.
5. Taste and Adjust:
- Taste the dressing and adjust the seasonings according to your preference.
6. Serve or Store:
- Toss a few tablespoons of the dressing with your choice of salad.
- Feel free to add your favorite salad toppings.
- If not using immediately, cover and refrigerate the dressing. Whisk or shake well before using again.
