Ingredients:
3 medium - large size beet roots
1/2 tsp black ground pepper
1/2 tsp toasted ground cumin
1/4 tsp toasted ground coriander
1/2 tsp fine sea salt
3 tsp olive oil
1/2 medium size white onion (thinly sliced)
2 Tbsp. fresh lemon juice
1/2 cup fresh cilantro (chopped)
Combine the exciting flavors of the Mediterranean in a healthy beet-root salad, and it will be a smash hit at summer parties. This healthy side dish is perfect to serve with chicken, fish or any protein. The recipe is easy to follow:
Wash and stem the beet roots. Using a pressure cooker or steamer, cook the beets until tender (try not to let the beets touch the water, as the water can diminish the taste and nutrients of the vegetable). Let cool and then peel off the skins. Cut into bite size portions. Add all the seasoning and the chopped cilantro, then mix all the ingredients well. Serve immediately or keep chilled for later.
