Ingredients:
1 cup dry quinoa
2 cups water
1 tsp sea salt
3 Persian cucumbers (chopped small)
4 Roma tomatoes (chopped small)
1/2 small red onion (finely chopped)
2 Tbsp fresh lemon juice
1/2 tsp Black ground pepper
2 Tbsp Za'atar Spice Blend
1 tsp ground sumac
2 Tbsp olive oil
1/2 cup flat leaf parsley (chopped)

Quick to make. Healthy and nutritious to eat. Perfect for vegans and vegetarians. I am talking about quinoa. This nearly perfect food stands alone in any culinary repertoire. It can be served as a hot or cold dish depending on what you fancy.
In keeping with the Mediterranean way of eating, I want to share my recipe for an amazing salad using quinoa and a few tasty spices that are widely used in the Mediterranean region, specifically Za'atar Spice Blend.
Bring the water to a boil. Stir in the quinoa and 1 tsp of sea salt, reduce heat to medium-low, cover, and simmer until water has been absorbed, about 15 to 20 minutes. Let it cool for 15 minutes. Spoon the quinoa into a large bowl.
In a medium size bowl, add the cucumber, tomatoes, red onion and parsley. Then add the lemon juice, black pepper sea salt, za'atar spice blend, sumac and olive oil. Mix well. Add the vegetables to the quinoa and toss well, making sure all the veggies are mixed into the quinoa. Serve it as a main course or an addition to grilled meet, fish or beans.
Optional: Sprinkle feta cheese crumbles.
